Georgian green beans
Georgian green beans are a delicious dish of vegetarian cuisine, which includes only products of plant origin. If you are looking for recipes for a lean menu, then this recipe is also for you. First we put a frying pan with vegetables on the stove and, while they are fried, we make a sauce of walnuts, garlic and lemon juice. Then we mix everything and serve on the table, in general, a dish from the series “it can never be easier”.
Unripe beans of ordinary beans (green-string beans, or asparagus beans) are fried, boiled, stewed. The recipes from this vegetable are especially interesting for those who decided to lose a few extra pounds, because in 100 grams of green beans hardly 24 kilocalories are gained. Of course, in combination with peanut sauce, the dish turns out to be hearty, but even people on a diet still need to eat something!

Ingredients for making green green beans in Georgian:
- 400 g of green beans;
- 50 g of red bell pepper;
- 80 g leek;
- 65 g of peeled walnuts;
- 1 2 lemons;
- 3 cloves of garlic;
- 120 ml of boiled water;
- 5 g of sea salt;
- olive oil, spices to taste.
The method of preparation of green green beans in Georgian
Pour 2 tablespoons of high-quality olive oil into the pan, then drop the leek chopped into rings. Please note that sand may be between the leeks, so rinse the greens thoroughly with running water!
Sweet peppers are cleaned from seeds, washed under a tap, cut the flesh into small cubes. Add chopped pepper to leek.
Then pour green green beans into the pan. I made a dish of frozen vegetables. Fresh pods need to be cleaned beforehand - cut off the ends, get a hard vein and cut into cubes.
Cook the vegetables on moderate heat for 10-12 minutes, mix occasionally.
While the vegetables are fried, we make a traditional Georgian sauce - bage. There are many options for its preparation - with broth, with pomegranate, with wine vinegar, with cilantro. Since our recipe is vegetarian, let's make a bage on the water.
Peeled walnuts are put in cold water for several minutes, then rinsed, dried in a hot pan.
Boil water, cool to room temperature.
Peel garlic cloves from husks.
Grind garlic and nuts in a mortar with salt, transfer to a mixer, pour cooled water. Squeeze juice out of half a lemon.
Beat the ingredients until a homogeneous light paste is obtained, this is the “bage”. We taste it, if necessary add a little more salt to taste, and if the sauce is very thick, pour water and whisk again.
Put the sauce on a plate. By the way, if you are a lover of Georgian condiments, then you will be able to find a sunshine, a small pinch will be just right.
We put warm vegetables on the sauce and immediately serve.
This dish is good in that it can be served both hot and cold. Delicious vegetables seasoned with aromatic sauce are a great dinner on fasting days.
