Salad with young cabbage, ham and crackers is a spring appetizer based on the classic Caesar. Of course, Caesar needs an Iceberg salad, cherry tomatoes and parmesan. However, a partial replacement of the ingredients is quite acceptable, besides it turns out very tasty and easy in spring. A salad prepared according to this recipe is suitable for a diet menu, as it is prepared from low-fat products and without mayonnaise.
For the preparation of croutons, take wheat-rye bread from whole grain flour, it is good if there are any seeds in it - flax, sunflower, pumpkin.
I cooked this appetizer from smoked chicken breast (skinless). You can replace the breast with boiled chicken, chicken ham or boiled beef.

Ingredients for a salad with young cabbage, ham and crackers
- 200 g smoked chicken breast;
- 300 g of young cabbage;
- 150 g of fresh cucumbers;
- 50 g of hard cheese;
- 150 g whole-grain toast bread.
- 10 ml of soy sauce;
- 20 ml of olive oil;
- 10 g of mustard;
- sugar, salt, pepper.
A method of preparing a salad with young cabbage, ham and crackers
We remove and remove from the fork cabbage leaflets and leaves that have fallen with visible damage. Cut the cabbage into thin strips, put in a bowl, sprinkle with a pinch of salt and gently squeeze it with your hands - rub it so that it takes up less space.
You should not try hard with grinding, since the leaves of young cabbage are tender and can easily turn into a jail.
Fresh cucumbers cut into thin strips, add to the bowl to the chopped cabbage.
From the smoked chicken breast, remove the skin, separate the meat from the bones. Cut the fillet into small cubes.
Add chopped chicken to the salad bowl.
Rub a small piece of hard cheese on a cheese grater, add to the rest of the ingredients. Hard cheese can be replaced with feta or feta cheese, the taste of the prepared salad of fresh cabbage with ham and crackers will be slightly different, but the variety is always nice.
Mix the sauce. In a bowl we combine table mustard with soy sauce and extra virgin olive oil, pour a pinch of sugar and salt to taste. The sauce can be shaken in a small jar with a tight-fitting lid; this is a very convenient way to prepare salad dressings.
Dry in a toaster a couple of slices of toast bread from whole grain flour to a golden crust. Cut the croutons into small cubes.
Add to the bowl with a salad of fresh cabbage and ham croutons and season with the sauce, mix thoroughly.
