Grilled zucchini with sour cream and vegetable sauce
Grilled zucchini with sour cream and fresh vegetables sauce is a vegetarian dish that you can open and close the barbecue season. Young zucchini are available in early spring, in the summer the garden is full of a variety of zucchini, and in late autumn mature vegetables are fried on charcoal, peeling them from seeds and peels.
At home, in an ordinary city apartment, you can also treat yourself to delicious vegetables with a light aroma of haze. In a special frying pan or on an electric grill, it is easy and simple to cook tasty and healthy vegetables with virtually no oil. Zucchini is juicy, slightly crispy, sour cream sauce with eggs and fresh vegetables perfectly complements this dish.

Grilled zucchini ingredients with sour cream and vegetable sauce
- 1 zucchini;
- 1 fresh cucumber;
- 2-3 radishes;
- 1 chicken egg;
- 1 2 chili peppers;
- a bunch of parsley;
- 100 g of sour cream;
- 10 g wasabi;
- pepper, salt, olive oil.

My zucchini, wipe dry, cut into round slices about a centimeter thick. For this recipe, we select young zucchini with undeveloped seeds and delicate skin.
You do not need to salt, pepper, add any spices and seasonings at this stage - they will burn on the grill, if you cook in a city apartment in the kitchen, then excess smoke is also useless.
In addition, salt draws water from vegetables, so there will be a lot of spray.
Pour zucchini with olive oil, this is the only ingredient needed to prepare products this way.
Thoroughly mix the vegetables with oil, so that the slices are covered with an oil film.
We heat the grill for about 5-6 minutes. When the grill is ready to work, then if you spray it with water - the drops bounce off and hiss. It is not necessary to grease the grill with oil - there is enough oil on vegetables.
We put slices of zucchini on a preheated grill, cook for several minutes on each side. A total of 3-4 minutes is enough to fry a slice of zucchini about a centimeter thick.
For the sauce, grate a fresh cucumber on a fine grater. To make the sauce tasty and tender, I advise you to peel the cucumber.
Add finely grated radish or daikon to the cucumber.
Finely chop a bunch of fresh parsley. We clear the half of the chili pod from seeds, cut finely.
Add chili and parsley to the radish with cucumber.
Boil the hard-boiled egg, grate or chop. Add the egg to the chopped vegetables.
We mix vegetables with wasabi and sour cream, salt to taste, sprinkle with freshly ground black pepper.
Mix the sauce, you can add a little lime or lemon juice, so to speak, add a sour note.
On a plate we put hot zucchini directly from the grill and thick vegetable sauce, decorate the dish with herbs and immediately serve it on the table. Grilled zucchini with sour cream and vegetable sauce ready. Enjoy your meal!
