Olivier salad with fresh cucumber and sausage, prepared according to this recipe, is slightly different from the traditional version. I, like any housewife who is experimenting in the kitchen, tried to bring a little of mine into this classic dish. In my opinion, and according to the guests who ate the salad, it turned out very tasty and fresh. Instead of canned peas, she took green frozen peas - it is brighter, but properly cooked, it also tastes better. Typically, vegetables for Olivier cook in their uniforms. I also decided to step back from this tradition and passer carrots in a mixture of butter and vegetable oil with red pepper. The rest of the ingredients are unchanged to be tasty, they must be fresh and of high quality.

Ingredients for Olivier Salad with Fresh Cucumber and Sausage
- 500 g of cooked sausage;
- 300 g of boiled potatoes;
- 300 g raw carrots;
- 200 g of frozen green peas;
- 150 g of onions;
- 6 hard boiled eggs;
- 150 g of fresh cucumbers;
- 150 g pickled cucumbers;
- 60 g of apples;
- 200 g mayonnaise;
- 20 ml of vegetable oil;
- 20 g butter;
- salt, red pepper, herbs for serving.
Method for the preparation of Olivier salad with fresh cucumber and sausage
We start with the semi-finished products. We put the peas in a stewpan with boiling water, add salt, blanch for 5-6 minutes, lay on a sieve.
Raw carrots cut into strips. In a pan, heat the vegetable and butter. We fry the carrots on moderate heat until soft, about 8 minutes, sprinkle with a pinch of salt and red pepper. Then mix carrots and peas, cool to room temperature.
We cut the green cucumbers into strips, sprinkle with salt, put in a colander, leave for 10 minutes to let the moisture out.
We cook hard-boiled eggs, chop finely, usually one egg is laid per serving of salad, this is a classic calculation of the ingredients.
We cut boiled sausage into cubes. All products for salads should be cut approximately the same, so it’s tastier.
A note of sourness and piquancy will add a salad of pickled cucumbers, cut them into small cubes.
Next, cut the boiled potatoes. By the way, there is an easy way to quickly peel potatoes in their skins. Drain the water from the finished potato, transfer it to a bowl of ice water for 1-2 minutes. After a contrast bath, the peel is removed easily.
Chop onions finely, sprinkle with a pinch of salt, pass until transparent in the same pan in which the carrots were prepared.
We mix all the products in the salad bowl, and, as it is said in the favorite movie “Office Romance”, add the grated apple. The apple must be peeled and grated on a coarse grater immediately before it has darkened.
Season with mayonnaise, taste, salt to taste and you're done!
Before serving Olivier decorate with fresh herbs.
