Ingredients for Cookies with Cottage Cheese
- 200 g of cottage cheese;

- 1 cup wheat flour;
- 1 teaspoon of baking powder;
- salt, icing sugar.
The method of preparing simple cookies with cottage cheese
Butter for the cookie recipe with cottage cheese is cut into small cubes, left at room temperature - the butter should melt a little. You can also put a bowl of chopped butter in a bowl of hot water for several minutes. Add melted sugar to melted butter. Grind butter with sugar or whisk with a mixer for a couple of minutes.
Next, add the cottage cheese. I advise fatty, gentle cottage cheese without grains. If grains are still there, then rub through a sieve twice or pass through a meat grinder. Mix cottage cheese with grated butter with a spoon or spatula.
Before adding an egg, I usually sprinkle flour in the dough, about 1 4 of the total. So when whipping butter does not cut off, the dough turns out smooth and uniform. This is not an obligatory step in this biscuit recipe with cottage cheese, but desirable, especially if you mix the ingredients in a food processor.
Add a large chicken egg to the liquid ingredients. Beat with a mixer for a couple of minutes until the mass becomes smooth.
The remaining wheat flour and baking powder are mixed well, sieved and added in small portions to a bowl with liquid ingredients.
Knead the dough. It should turn out to be quite tight, if liquid, then add a little more flour, if very tight, then you can pour a tablespoon of kefir, milk or cold water. We collect the finished dough in a bun, put in the refrigerator for 15 minutes.
We put a sheet of parchment on a baking sheet, sprinkle the parchment with a vegetable spray or grease it with a drop of oil. We pluck off small pieces of dough. Between the palms we roll the balls. We spread it on a baking sheet, leave 3-4 centimeters between the balls. To make the cookies the same, I advise you to weigh each piece on the scales, optimally about 25-30 g per piece.
We slightly press the balls with your hand so that they are a little flattened and send to the oven heated to 180 degrees Celsius. Bake for 10-14 minutes, make sure that it does not burn! Baking time depends on the weight of the product and the individual characteristics of your plate. In general, when the cookies rise and a little brown, you can get the pan out of the oven. Cool on a baking sheet, sprinkle with powdered sugar through a strainer.
Delicious cookies with cottage cheese made from simple ingredients are ready. We serve it for a cup of coffee or tea, although with homemade compote or milk it is also very tasty. Enjoy your meal!
