Ingredients for Yeast Pie with Liver and Onion
For the test:
- 500 g of wheat flour;
- 1 teaspoon high-speed yeast;
- 30 g margarine;
- 310 ml of water;
- 1 teaspoon of salt;
- 2 teaspoons of sugar;
- 1 egg for lubrication.
- 400 g chicken liver;
- 200 g of onion;
- 35 g butter;
- a bunch of cilantro;
- white pepper;
- vegetable oil;
The method of preparation of lush yeast cake with liver and onions
Sift wheat flour into a bowl, add quick-acting dry yeast, mix. The usual dry yeast for this yeast cake needs to be activated in warm water with sugar for half an hour, then prepare the dough according to the recipe.
We heat the water to 35 degrees Celsius. Pour sugar and salt into the water, stir, add diced margarine. Margarine will melt quickly in warm water.
We mix dry ingredients with liquid ones, put them on the board, knead the dough for 10-15 minutes. The dough is soft and quite sticky at first, but do not add flour! As soon as the dough stops sticking to your hands, put it in a bowl greased with vegetable oil, tighten with cling film and put in a warm place for 1 hour.
After an hour, put the dough on the board, crush and again put it into the heat for an hour. The finished dough rises, increasing, about twice, it turns out very soft and pleasant to the touch.
Cooking the filling for the yeast cake. Finely chop the onions. Pour a tablespoon of vegetable oil into the pan, put the chopped onion, salt, and pass until soft.
Pour two liters of water into the pan, heat to a boil, salt. We put the chicken liver in boiling water, cook 5 minutes after boiling. I advise you to cook the liver in small batches, so the water will not cool sharply. Throw the finished liver onto a sieve, rinse.
Cut the chicken liver into small cubes. Add the chopped liver and butter to the pan to the sautéed onion.
We cut a bunch of cilantro finely. We season the filling with freshly ground white pepper and chopped cilantro, mix, taste, salt to taste.
Crumple the dough again, separate 2 3, roll out the cake.
We put the dough in a cast iron pan or in a baking dish, stretch, form a round base with a side.
We spread the filling into the form, distribute it in an even layer.
1 3 dough is also rolled out in a circle. Put the circle on the filling, tighten the edges of the dough, connect - it turns out a closed cake.
We make a hole in the center and several deep cuts in a circle so that the steam from the filling goes out.
We leave the cake in a warm place for 20 minutes, in the meantime, heat the oven to 200 degrees Celsius. Beat the egg with a fork, grease the cake with a beaten egg.
Sprinkle with sesame seeds, send to the heated oven for 35 minutes.
