Baked potato accordion with ham
Baked accordion potatoes in foil - an original recipe for cooking ordinary potatoes with ham or bacon. It would seem that it could be easier than potatoes with pork, and how to make an elegant dish from these ordinary products? The secret is simple - a large potato tuber, tasty ham or smoked pork belly, spicy herbs - rosemary and oregano, a small piece of food parchment and foil. You will also need two chopsticks of the same thickness, preferably wooden, for example, Chinese chopsticks. I indicate the ingredients per person, if you cook for a large company, then increase the number of potatoes and other ingredients by the number of mouths suffering.

Ingredients for Baked Harmonica Potato with Ham
- 1 large potato (approximately 150 g);
- 45 g of oily ham;
- 2 g smoked paprika;
- a sprig of rosemary;
- a pinch of oregano;
- 10 ml extra virgin olive oil;
- 15 g of hard cream cheese;
- 2 g of sea coarse salt.
The method of preparation of baked accordion potatoes with ham
We clean the potatoes, on the one hand we cut them so that the lower part becomes flat.
We put two sticks on a flat board, between them place the potatoes with the flat side down. We take a sharp knife, cut strictly perpendicular to the surface, make cuts in increments of about 5 millimeters.
A knife will cut potatoes only to sticks, the lower part will remain intact, and cut petals will be obtained from above.
We take chilled fat ham, it is advisable to hold it in the freezer for about half an hour before cooking. We cut ham very thinly, slices with a thickness should be no more than two millimeters.
Insert ham slices between the potato slices - our potato begins to resemble an open accordion.
We take a small sheet of waxed parchment, put the potatoes with ham, pour the first cold pressed olive oil.
Next, add seasonings and spices - sprinkle with large sea salt, ground smoked paprika, oregano and put a small sprig of rosemary.
We lift the edges of the parchment, put together two wide edges, then turn the narrow edges along the sides like a candy.
We put food foil in two layers. Wrap our potato “candy” tightly in foil.
Preheat the oven to 190 degrees Celsius. We bake potatoes for about 40 minutes, depending on the size, and most importantly, on the thickness of the tuber. Meanwhile, we cut the hard cream cheese into thin sticks.
Then we take out almost finished potatoes (do not turn off the oven), expand the packaging, put cheese slices on the slices of potatoes. We put the opened bundle in a red-hot oven, bake for several minutes until golden brown.
As soon as the potatoes are browned, and it will take 4-7 minutes, we take it out of the oven and serve it hot, hot with heat.
Tip: to prepare several servings, cut a wide piece of foil, then parchment, place everything at once on a baking sheet, put out accordion potatoes, pack the potatoes tightly in a wide envelope of parchment first, then cover everything with foil.
