Beet cutlets with apples and flax seeds
The long seven weeks of Lent are not so easy to cook delicious and varied dishes every day. You can include lean beet cutlets with apples and flax seeds in the fasting dinner menu or take it to work for a snack for lunch. Of course, the phrase “lean cutlets” is saddening for many, but it's not as bad as it seems. In the vegetarian menu, which is fully suitable for fasting days, long ago, recipes for delicious vegetable cutlets from beets, carrots and legumes were invented, you just need to show imagination and add some useful ingredients to vegetables and fruits, for example, flax seeds, sesame or nuts.
Since eggs are a banned product on fasting days, and cutlets need to be tied with something, here instant oatmeal will come to our aid.
So, for a lean dinner, we fry beetroot patties, prepare a fresh vegetable salad and make a vegetarian sauce and it turns out that lean food is not bad at all - it’s worth trying to make a lean menu for a week, it’s very interesting and informative!

Ingredients for beetroot cutlets with apples and flax seeds
- 300 g beets;
- 200 g of sweet apples;
- 50 g semolina;
- 60 g of oatmeal;
- 3 teaspoons of flaxseed;
- black sesame, white sesame, green onion for serving.
The method of preparation of beet cutlets with apples and flax seeds
With a brush, we boil the beets until cooked, then place them in cold water for several minutes. Peel the beets, rub on a coarse grater.
To the beets we add apples grated on a coarse grater, you can peel them, but this is not necessary.
Add a pinch of salt and a pinch of sugar to beets and apples, then pour semolina and oatmeal. Mix the ingredients thoroughly. A mixture of semolina and oatmeal successfully replaces the absence of eggs in the dough, in addition, these cereals make vegetable cutlets more satisfying.
Add flaxseeds to the bowl with beetroot dough, leave it for 15-20 minutes, so that the semolina and oatmeal are soaked in juices and swollen, this will make the dough sticky, and the cutlets will be easily molded.
We form small flat cutlets, roll them in semolina. You can roll cutlets in breadcrumbs or oatmeal, as you like.
We heat olive oil for frying in a pan with non-stick coating, fry cutlets for 3 minutes on each side, then put in a pan with a thick bottom, cover with a lid and simmer for about 7 minutes under the lid.
You can cook cutlets in the oven. We cover the baking sheet with parchment, grease it with olive or vegetable oil, lay out the patties and bake for 25 minutes in an oven preheated to 170 degrees.
Fry white sesame in a dry frying pan until golden brown, add a teaspoon of black sesame to it (just for beauty). Ready beet patties with apples and flax seeds are rolled in sesame seeds, served to the table, sprinkled with green onions.
