Oven pizza with ham and pancetta in the oven
Yeast pizza in the oven with ham and pancetta is a delicious homemade pastry that is loved and cooked all over the world. Pancetta (a type of bacon) is a fatty pork brisket dried with salt and herbs with layers of fat and meat. Such a spicy addition gives a unique flavor to the finished pizza.
A simple pizza dough is made from three ingredients - water, yeast and flour. To make it elastic, add a little quality olive oil, which is desirable, but not necessary. The dough can be prepared in a larger volume, increasing in proportion to the number of ingredients indicated in the recipe. It can be stored in the refrigerator for 10-12 hours, and one hour before cooking, remove from the refrigerator, cure, and leave it in a warm place so that it comes up again at room temperature.

Ham and Pancetta Yeast Pizza Ingredients
- 7 g of dry yeast;
- 185 ml of water;
- 300 g of wheat flour;
- 3 g of salt;
- 15 ml of olive oil.
- 100 g of ham;
- 40 g pancetta;
- 50 g of Mozzarella cheese;
- 50 g of hard cheese;
- 70 g of cherry tomatoes;
- 40 g leek;
- onion head;
- 30 g of tomato paste;
- 15 ml of olive oil;
- thyme, basil, pepper.
A method of cooking yeast pizza with ham and pancetta in the oven
Pour wheat flour onto a work surface, add fine table salt without additives and dry yeast. We make a deepening in the center and slowly pour into it clean water heated to 35 degrees Celsius and extra virgin olive oil of the first cold extraction. Mix the ingredients with your hands, then knead the dough until it ceases to stick to the surface.
Lubricate the bowl with olive oil (so that the dough does not stick), put the gingerbread man in a bowl, cover with a clean, damp napkin and put it in a warm, secluded place without drafts.
Leave the bowl warm for 45-50 minutes, during which time the dough will double in volume.
We crumple the dough, with a rolling pin we roll out a round cake on a board sprinkled with wheat flour to a thickness of about half a centimeter. We wind the cake on a rolling pin, transfer it to a dry baking sheet.
In a circle of tortillas with our fingers we make a small side so that the juice from the filling does not flow out onto the baking sheet. Grease the dough with tomato paste.
Fry the finely chopped onion in olive oil with thyme and salt. Cut the ham into thin slices and the pancetta into small sticks.
Put the fried onion, ham and pancetta on the tortilla.
Cheese "Mozzarella" cut into cubes or tear with your hands, spread out on a flat cake evenly. Cherry tomatoes are cut into circles, also spread throughout the pizza.
Add finely chopped leek, basil and hard cheese grated on a coarse grater (it will work best with parmesan).
Sprinkle pizza with olive oil, sprinkle with thyme. We heat the oven to a temperature of 250 degrees Celsius.
We send the yeast pizza with ham and pancetta to the hot oven for 12-15 minutes, then we take it out and immediately remove from the baking sheet on a dry board.
