French pancakes with milk without yeast yeast are known to many under the name crepes, which in French means pancakes or pancakes. I like a small amount of flour in crepes, and this does not affect the quality, taste and satiety of the dish.
The filling for crepes can be any, in my opinion, tender home-made cottage cheese or ricotta with dried fruits - the most suitable option.

- 2 chicken eggs;
- 160 ml of milk;
- 35 g butter (+ lubricating oil);
- 60 g of wheat flour, s;
- 5 g of granulated sugar;
- 2 g of soda;

- 50 g cane sugar;
- 100 g of prunes;

Making a filling for French crepes
We wipe the cottage cheese through a sieve to get rid of lumps. You can take mascarpone or ricotta, usually these delicate types of cheese are simply mixed with fillers (sugar, fruits, dried fruits).
We add sour cream, cane sugar to the mashed cottage cheese and rub the zest of half of lime on a fine grater.
Soak the prunes in warm water, rinse, squeeze, cut finely and add to the curd mass. Mix the ingredients, put in the refrigerator.
Making pancake dough
Break two eggs into a bowl, add a pinch of fine salt and granulated sugar. Mix the eggs with a whisk for 2-3 minutes.
Pour cold milk into a bowl, mix the ingredients again to form a light foam.
Melt the butter, cool. Pour melted butter into a bowl, mix again.
Add soda to wheat flour, literally on the tip of a knife, sift the flour into a bowl with liquid ingredients.
Quickly mix the dough, the consistency of it will resemble cream, that is, a little thicker than milk.
Cooking thin pancakes
We heat the pan, grease with a thin layer of cooking oil. For a pancake you need no more than two tablespoons of dough, otherwise the pancakes will turn out to be thick.
So, pour the dough, distribute evenly, fry until brown on both sides.
Fold the finished pancakes on a plate, generously lubricate with butter.
On a quarter of the pancake we lay the stuffing, fold in half and again in half.
Fill all the pancakes with the filling, put it on a large dish.
Before serving, sprinkle with powdered sugar, mint leaves and fresh berries. However, if there is no mint and berries, homemade jam or jam will be successfully replaced. Enjoy your meal!
