Sandwiches with sprats on the festive table
Sandwiches with sprats on the festive table are budget sandwiches for the holiday, which, despite the simplicity, are incredibly popular. A lot of cold snacks from ancient Soviet times to this day can be found on the New Year's table. But several recipes are so firmly rooted in the festive menu that it can already be called a tradition. Olivier with doctor's sausage, a herring under a fur coat, fake herring caviar with carrots, sandwiches with red caviar, aspic fish and, of course, sandwiches with sprats.

My recipe is good in that the bread, fried in a certain way, does not become stale for a long time and does not soak, the sandwiches remain fresh, delicious and the oven is not needed for their preparation.

Ingredients for Sprat Sandwiches
- 1 can of sprat;
- 2 chicken eggs;
- 4 quail eggs;
- 30 g of cheese;
- a small bunch of dill;
- 1 tablespoon of mayonnaise;
- 1 tablespoon of cheese sauce;
- wheat-rye bread;
- 1 clove of garlic;
- black pepper, vegetable and butter.
The method of preparation of sandwiches with sprats
Making croutons. We cut wheat-rye bread into slices about a centimeter thick. Break one chicken egg into a bowl.
Salt the egg, add freshly ground black pepper and mix with a fork to achieve a uniform consistency. You do not need to beat in foam, mix the egg well enough.
Now dip a slice of bread in a beaten egg, first on one side, then on the other side.
In a pan, heat the vegetable and butter. Fry slices of bread until golden brown on each side. Rub the fried bread with a clove of garlic.
Boil hard-boiled chicken egg, cool, rub on a grater. Finely chop a small bunch of dill, leave a few twigs for decoration.
To the boiled egg we add cheese sauce and mayonnaise, grated cheese and chopped dill.
Thoroughly grind the ingredients with a fork to get a thick homogeneous paste-paste.
Hard-boiled quail eggs, it takes no more than two minutes to cook them. Cool the eggs in cold water, clean, cut in half.
Spread slices of toasted bread with cheese paste. The paste layer can be thick - it is very tasty!
We spread three fish on each sandwich. The paste is viscous, so they are well fixed on the sandwich and will not fall from it (on the way to the mouth).
We decorate sandwiches with halves of quail eggs and sprigs of dill.
We spread our sandwiches with sprats on a plate and immediately serve on the table. Enjoy your meal!
The younger generation can and does choose seafood salad, but recently saw a comment by a young friend who was offended by attacks on Olivier. He said that he eats this salad only once a year, and therefore his mother does not present a New Year's table without a traditional recipe! Once a year, you can recall the traditions - to cook olivier, herring under a fur coat and delicious sandwiches with sprats!
